The outer initial branches/ skins yellow & dye off as newer ones start growing in from the center of the trunk. Wonderful that it has started more roots. It's getting well on its way to thriving & producing new shoots soon!  . It's a delicate process.Sounds like you've done a great job. Remember it takes 9-12 months for a coconut to even sprout roots.
